Op dit moment gebruik ik een Still Spirits Air Still Pro. Nee het is geen T500 met alles er op en er aan, maar werkt op zich prima. Nu zit ook in mijn kleine Air Still koperen zadels. Naar verluidt zou dat "een filter voor sulfieten en nare geuren in het distillaat" zijn. Ik heb daar zo mijn twijfels over. Want wat is sulfiet? Als SO2 gas in water wordt gebracht, reageert dat met water tot H2SO3 (zwaveligzuur, niet zwavelzuur). Sulfieten zijn zouten van dit zuur. Dus sulfiet alleen bestaat niet en is altijd gebonden aan bijvoorbeeld kalium of natrium. Maar dit zit helemaal niet in je mais, graan of barley. "Sulfiet" wordt bij het maken van wijn toegevoegd en dan meestal als kaliumwaterstofsulfiet, ook kaliumbisulfiet, KDS (E nummer 228) genoemd. Dus hoezo zou koper iets met sulfiet moeten doen bij het distilleren? Maar goed.
Toch wordt koper heel veel gebruikt in de distilleer-wereld. Maar als ik de koperen zadels uit mijn Air Still haal zie ik dat die koperen zadels er niet bepaald fris uit zien eigenlijk wat geoxideerd uit. Er zitten ook stalen zadels in die zien er beter uit. Dus ik heb ze maar weggelaten want geoxideerd koper is niet gezond. Sterker nog, ik verdenk die geoxideerde koperen zadels van de wat bittere metalige nasmaak in mijn laatste distillaat resultaat.
Ik ben benieuwd naar jullie reactie over de rol van koper in ketels, allambiek, refluxcolom en zadels. En of koper sulfiet kan binden 🙂
Ik heb dat stuk dat Alchemist een link voor heeft gestuurd gelezen. Het blijkt te gaan om de stof
dimethyl trisulphide (DMTS).
Conclusions. The presence of copper in pot stills was confirmed as being important for the control of sulphury and meaty aromas in new make spirit, and DMTS levels showed a good correlation with these aromas. In these laboratory scale distillations, copper was found to reduce the level of this compound best when placed in the wash still condenser or spirit still pot.
Dus het maakt ook nog uit waar je het koper plaatst en er is kennelijk een verschil tussen pot still modus en reflux modus want:

There was found to be opposing trends in the wash and spirit stills. In the wash still, the pot (S1) was the least effective at reducing DMTS whilst the condenser (S3) was most effective.
In the spirit still, the pot (S4) was most effective and the condenser (S6) was least effective.
The most effective sections for reducing the DMTS level were therefore the wash still condenser and the spirit still pot (S3 and S4)
Misschien een domme vraag, maar maken jullie al die koperen delen ook regelmatig schoon? Want er zou ook zomaar oxidatie van koper aan de binnenkant van je condensor of zo kunnen zitten.
